Baked pork meatballs

Background
Meatballs are really easy to make yourself – and much cheaper and healthier than the ready-prepared versions they sell in supermarkets. The only thing you’ll need to get is good quality minced meat, then mix it with some herbs and a binding ingredient (such as breadcrumbs, cooked rice, egg, or flax-egg) and you’re ready to cook them. These baked pork meatballs are cooked in the oven, not fried, so they are even more healthy. Serve them with pasta/rice and tomato sauce for a main meal. Alternatively, they are perfects as party nibbles or can be taken to a picnic or to work in your lunch box with a crunchy salad.
Ingredients
- 450g good quality minced pork
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp ground cumin
- Salt & pepper, to taste
- 2 Tbsp chopped fresh herb of your choice ( such as parsley, coriander, basil, dill or mint)
- 1 egg or flax-egg, optional
Instructions
- Preheat the oven to 180°C.
- Put all ingredients in a mixing bowl and combine well.
- Line two baking sheets with parchment paper.
- Using a spoon add dollops of the mixture into your palm and shape balls, size of a lollipop.
- Put the meatballs on the lined sheet and bake for 20-25 minutes until golden brown.
- Rotate the ball a couple of times during the baking so they can brown evenly. Be careful not to overcook them - otherwise they will be too dry.
- Transfer the balls onto a plate and serve them warm or at room temperature.
