Baked side salmon with lemon and herbs
Background
One large filet of side salmon can feed 6 people, so itβs Β is perfect for special family meals to celebrate Christmas, Easter, Birthdays and other occasions. Itβs best not to cover the fish with manyΒ spices and extras - simple recipes work the best, like this Mediterranean-style baked side of salmon with lemon and herbs. You can add some chilli slices or flakes for a spicy version. Use fresh herbs appropriate for the season and your menu. Β Serve it with a mash and a salad.
Ingredients
- About 1kg side of salmon, boned and skin on
- 1 lemon, sliced into 6 rings
- 1 Tbsp Olive oil
- 1 tsp dried Italian mixed herbs or marjoram
- 50 ml white wine or prosecco
- Fresh herbs: parsley, basil,
Instructions
- Preheat the oven to 180Β°C.
- Put three slices of lemon in a row in the middle of a baking tray. Lay the salmon on top. Rub with some olive oil, then dust with the dries herbs. Season with salt and pepper.
- Pour the wine around the fish, then put the reaming lemon slices on top.
- Cover the tray with foil, then bake the fish in the middle of the oven for about 20 minutes.
- Rest for 5 minutes, then serve with chopped fresh herbs of your choice.
