Baked summer fruits with oat crumble
Background
I always a have a pack of Summer Fruits or Fruits of The Forest in my freezer so that I could make last-minute desserts or cakes. This baked summer fruits with oat crumble is similar to the famous and popular Crumble but the topping is more crunchy and there is less of it. Serve it with vanilla custard, yogurt or ice cream. The dish can easily be vegan if it’s made with plant-based margarine, and you can use gluten-free oats and flour too.
Ingredients
- 500g frozen summer fruits
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1 cup oat
- ½ cup flour
- 50g soft butter or dairy free spread
- 6 Tbsp muscovado sugar
- 3 Tbsp chopped nuts, optional
Instructions
- Preheat the oven to 170°C.
- Put the frozen fruits in a baking dish, then add half of the cinnamon, the vanilla and 4 spoonful of the sugar (add more if you have a sweet tooth). Add the nuts too, if used.
- Mix the oats, sugar, remaining cinnamon and flour, then add dots of the butter or spread. Work them together with your fingers, but not too finely, then scatter these on top the fruits. (You can add some ground nuts too to the mixture, if liked.)
- Put the dish in the middle of the oven and bake for 25-30 minutes, until the topping is golden and the fruits are bubbling.
- Serve warm with custard, ice cream or crème fraîche/ vanilla yoghurt
