Baked sweet potatoes with gremolata
Background
I just love baked sweet potatoes - they are so healthy and so delicious! You can add all kinds of yummy toppings, or mix the baked flesh with sauces & spices - et voilΓ you get a healthy yet filling meal or a delicious side dish! Perfect for lazy weekends! These baked sweet potatoes with gremolata are very easy to make.
Ingredients
- 2 large organic sweet potatoes ( or 4 small)
- 2 Tbsp extra virgin olive oil
- 1 small handful of parsley or mint leaves (or mixture of both)
- Β½ lemon zested
- Β½ chilli pepper or few pinches of chilli flakes
- 1 small garlic, minced
Instructions
- Preheat the oven to 180°C. Pierce the potatoes several times with a fork and put them in a roasting tin.
- Bake for about 50 minutes until cooked through (insert a skewer to test).
- Meanwhile put the lemon zest, chilli, parsley and oil in a mini food processor and whizz until smooth. Season with salt and pepper.
- Cut a deep slit in the potatoes, spoon in some gremolata, then a dollop of yoghurt. Finally top with gremolata.
- Serve warm.
Tips
They're quite spicy, so adjust the chilli if you wish.Categories
