Background
I just love baked sweet potatoes - every time the oven is on Β I put a few on a tray and bake them for meals ahead. This baked sweet potatoes with spiced chicken is one of those meals I throw together during the week, using pre-baked sweet potatoes. Of course you can make this recipe from scratch -Β just bake some sweet potatoes, let them cool and follow below. Serve it with a crispy green salad.

- 1 tbp olive oil
- 4 spring onions, chopped
- Chilli flakes, to taste
- 1 garlic, minced
