Baked sweet potatoes with spiced chicken
Background
I just love baked sweet potatoes - every time the oven is on I put a few on a tray and bake them for meals ahead. This baked sweet potatoes with spiced chicken is one of those meals I throw together during the week, using pre-baked sweet potatoes. Of course you can make this recipe from scratch - just bake some sweet potatoes, let them cool and follow below. Serve it with a crispy green salad.
Ingredients
- 2 baked sweet potatoes
- 1 large chicken breast fillet
- ¼ tsp turmeric
- ¼ tsp chilli pepper
- ¼ tsp paprika
- 1 tbp olive oil
- 4 spring onions, chopped
- Chilli flakes, to taste
- 1 garlic, minced
- Grated hard cheese, optional
Instructions
- Let the sweet potatoes cool and cut them in half vertically. Scoop out the flesh into a bowl.
- Mix the spices with oil and brush the chicken breast. Heat a griddle pan or put the oven on to grill setting. Cook on each side for about 5-5 minutes. Let it rest for a 5 minutes then cut in into bite-sized chunks.
- Add the chicken to the sweet potatoes together with the spring onions and minced garlic. Season to taste, and add a couple of pinches of chilli flakes. Mix well.
- Fill the sweet potato skins with the filling and scatter some cheese on top, if used.
- Bake in the oven for about 10 minutes until warmed through and the cheese has melted.
- Serve warm.
