Balsamic honey chicken skewers

Background
If you're doing a BBQ and looking for a tasty and easy recipe, you've found one! These balsamic honey chicken skewers are a real people-pleaser, sweet & sour and delicious. You can just grill them in the oven or griddle the kebabs on the hob if you don't have a BBQ. Serve with salad.
Ingredients
- 1 red onion
- 1 Tbsp balsamic vinegar
- 1 tsp runny clear honey
- 2 cloves garlic, minced
- 4 chicken breast fillets (skinless)
- 2 lemons - zest and juice
- 1 Tbsp oregano
Instructions
- Cut the chicken breasts into bite-sized pieces.
- Mix the balsamic vinegar, oregano, honey, garlic, lemon juice & zest in a bowl, add the chicken pieces and cover well with the sauce. Marinate for 20-30 minutes.
- Meanwhile, soak 6 wooden skewers in water and cut the onion into wedges.
- Thread the chicken pieces & onion onto the skewers alternately and barbecue, grill or griddle until golden brown, turning regularly to make sure they're cooked through.
