Balsamic salad with bacon

Background
I made this balsamic salad with bacon with plant-based “bacon” which certainly smelt like bacon and tasted almost like the real thing! You can use normal bacon too or Pancetta, if preferred. This salad is very easy, ready under 10 minutes. Serve it with crusty bread or toasted sourdough.
Ingredients
- 2 handful of mixed salad leaves
- 4 rashes of bacon (or plant-based alternative)
- 1 handful cherry tomatoes
- ½ cup pitted olives
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 handful walnuts, chopped
Instructions
- Heat a drop of oil in a frying pan or griddle pan and fry the bacon on the both sides until golden and crispy.
- Meanwhile, scatter the salad leaves onto two plates or into a bowl. Add the tomatoes, oil and balsamic, then toss well.
- When the bacon is ready, remove it to a plate, lined with paper towel. When cooled, tear or cut them into small pieces.
- Add the bacon and walnuts to the salad. Toss gently and serve.
