Barbecued Harissa squid

Background
For summer BBQ parties I highly recommend this super easy barbecued Harissa squid. It takes only 5 minutes to cook (which can also be done in a griddle-pan). Serve it with a crispy green salad in flat bread or with couscous.
Ingredients
- 4-6 raw squid
- Juice and zest of 1 lemon
- 2 Tbsp harissa paste
- Β½ Tbsp (sundried) tomato purΓ©e
- 1 garlic, minced
- 1 tsp olive oil
- 1 Tbsp. chopped mint or parsley
- Β½ tsp salt
- ΒΌ tsp ground pepper
Instructions
- Remove the tentacles and slice the squid into 1 inch thick rings.
- Mix the remaining ingredients in a bowl. Add the squid and marinate up to 2 hours.
- Heat the BBQ or griddle pan.
- Thread the squid rings onto metallic skewers and cook for approx 5minutes until charred,turning regularly.
- The tentacles you can pan-fry, griddle or grill.
- Serve warm, garnished with mint leaves.
