BBQ potato salad with herbs& capers sauce

Background
This BBQ potato salad with herbs& capers sauce is a lovely side dish that goes well with barbecued meat and fish. You can cook the potatoes in advance, so the barbecuing will take only a few minutes. So it's perfect for summer parties, barbecues and picnics.
Ingredients
- 500g new potatoes (waxy)
- Fresh bay leaves
- 1 handful of parsley (flat-leaf)
- 1 handful of basil
- 1 garlic clove
- juice of ½ lemon
- 2 Tbsp olive oil
- 1 shallot
- 1 Tbsp capers
Instructions
- Clean the potatoes then put them in a pan of lightly salted water. Bring this to the boil and cook for about 5 minutes until they are almost cooked through. Drain and let the cool.
- Once cooled, cut them in half and put a bay leaf between them then thread them onto metal or pre-soaked wooden skewers. Barbecue them on medium heat until lightly charred.
- Meanwhile mix all other ingredients in a small blender. Season with salt and pepper to taste.
- When the potatoes are done, put them in bowl, discard the bay leaves and pour over the sauce. Toss well and serve.
Tips
Depending on your mains you can change the basil to mint or the parsley to coriander and so on.© 2026 Copyright CookTogether
