BBQ veggie & pasta salad
Background
When I have the barbecue going in the summer, I always grill some extra vegetables for later use. Bell peppers, onions, garlic bulbs, aubergines can be put straight on the BBQ, without any preparation whatsoever. When they are done just let them cool, remove the skin and the flesh can be used for lots of lovely dishes. This barbecue pasta salad is a perfect example - itβs ready within 10 minutes and itβs absolutely delicious. Served with a crispy salad, itβs ideal for a lazy summer lunch or supper.
