Beef and bean burritos

Background
These beef and bean burritos are perfect for parties and weekend get-togethers. You can make the filling well ahead and keep refrigerated until the event. You can make it with stewing beef too - but then youβll need to cook the stew for much longer. Serve it with salsa, guacamole or sour cream on the side.
Ingredients
- 1 red onion
- 2 cloves of garlic
- 300g beef steak
- 1 Tbsps olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1 tsp chipotle or tomato paste
- Β½ bell pepper
- 1 tin black beans, drained
- 2 medium tomatoes
- 100g green beans
- 1 corn on the cob, grilled
- To serve:
- Tortilla wraps ( corn or wheat)
- Jarred JalapeΓ±o pepper, sliced
- Chopped Parsley or coriander
Instructions
- Finely chop the onion and garlic.
- Cut the beef into thin strips or small cubes. Chop the bell pepper & tomatoes into tiny pieces. Cut the green beans into 1cm pieces.
- Heat the oil in a heavy based pan and gently soften the onion. Add the garlic and beef, stir until the meet has changed colour. Add the spices, stir, then add the paste, bell pepper & tomato pieces. Season with salt and pepper. Add a splash of water, put the lid on and bring to the boil. Cook for 20 minutes until you get a sticky mixture.
- Meanwhile grill or char the corn, cool then remove the kernels with a sharp knife. Set the kernels aside. Drain the beans.
- When the stew is thick and silky, stir in both beans and corn kernels. Put the lid on and heat through while you warm up the tortilla wraps for a minute on both sides.
- Spoon some beef & bean mixture in the middle of the tortilla, add some salsa, fresh herbs, guacamole, grated cheese or sour cream and few slices of JalapeΓ±o pepper. You can drizzle some chilli sauce over it too, if you like the heat!
- Create an envelope and then wrap it tightly, then cut it in half.
- Serve warm.
