Beef & orange stir-fry

Background
This beef & orange stir-fry can easily be prepared ahead; the cooking takes just 10 minutes - so it's a perfect dish for a midweek supper or for part of a Chinese menu when you have friends over. Serve it with rice and stir-fried vegetables.
Ingredients
- 500g sirloin steak
- 3 Tbsp groundnut oil
- 3 medium onions (thinly sliced)
- 3 Tbsp chopped garlic
- 2 tsp orange zest
- 2 Tbsp Chinese rice wine
- 1 tsp cane sugar
- 2 Tbsp Oyster sauce
- For the marinade:
- 2 tsp light soy sauce
- 2 tsp Chinese rice wine
- 2 tsp sesame oil
- 2 tsp corn starch
Instructions
- Mix together the marinade ingredients.
- Cut the steak into 3cm wide slices and place them in a bowl. Add the marinade, mix well and leave for 15-20 minutes.
- Heat the wok. When piping hot, add 2 tablespoon of oil and wait until the oil is smoking a little - then add the beef and stir-fry for 2 minutes.
- Remove the beef, wipe the wok and heat it again. When hot, add the remaining oil, heat to smoking point.
- Add the onion, garlic and orange zest and stir-fry for a minute. Add the rice wine, sugar, then stir for 3 minutes.
- Put the steak back, add the oyster sauce and warm through.
- Serve immediately.
