Background
Blue cheese and salmon is an interesting combination. This paté is quick & easy to prepare, making it an ideal spread for party snack parties (especially as an accompaniment with white wine or fizzy). It's also perfect to make delicious sandwiches for picnics or your packed lunch forΒ work.
Ingredients
- 1 small can salmon (about 200g)
- ΒΌ cup of blue cheese (such as stilton)
- 2 Tbsp chopped parsley
- 1Tbsp grated onion
- 50g cream cheese
- Β½ garlic (minced)
- salt & pepper
- 1 Tbsp freshly squeezed lemon juice
- 1tsp Worcestershire sauce
- 1 slice of Anchovy or Β½ tsp anchovy paste
Instructions
- Drain the salmon and remove any skin.
- Put it into a small food processor, add the remaining ingredients and blend into a coarse paste. Alternatively use a pestle & mortar or just a fork.
- Let the paté rest in the refrigerator for at least 30 minutes for the flavours to infuse.
