Background
This boozy ricotta tiramisu is made without coffee (and eggs), but has more alcohol than usual. You can use whatever you feel like -Β for example Amaretto, Brandy, Cognac, Marsala, Sherry etc. Itβs an easy dessert that is ideal for the winter festivities.
Ingredients
- 100 ml double cream
- 150g ricotta
- 1 tsp vanilla extract
- 4 Tbsp Amaretto
- 1 TbspΒ Stevia or 2 Tbsp maple syrup
- About 10Β Lady fingers (Savoiardi)
- Good quality dark chocolate
Instructions
- Whisk the cream, ricotta, vanilla, Stevia until you get a thick, smooth cream.
- Pour the Brandy or other alcohol in a shallow dish. Dip in the lady fingers, each at a time, for a couple of seconds, then turn them over to soak on the other side. Make sure they are not soggy. Put them tightly next to each other in a deep serving dish, then spread half of the cream mixture on top.
- Grate enough chocolate over the top to cover the cream completely.
- Repeat the layering once more, then cover the dish and put it in the fridge.
- Chill for a couple of hours before serving.
