Bottle gourd and drumsticks in tamarind gravy

Background
Bottle gourds and drumsticks are very healthy vegetables and this recipe is very famous in the southern part of India. It goes very well with steamed rice.
Ingredients
- ½ Bottle gourd (cubed)
- ½ Drumsticks (cut into pieces)
- 2 Onions (chopped)
- 2 Tomatoes (chopped)
- 1 Green chilli (chopped)
- Salt as required
- 2 Tbsp Oil
- 2 tsp Chilli powder
- 1 tsp Sugar
- 2 tsp Coriander powder
- 1 tsp Cumin powder
- Lemon sized tamarind (soaked in warm water and squeezed)
- 1 tsp Mustard seeds
- ½ tsp Fenugreek seeds
- A pinch of asafoetida
- A few springs of coriander leaves chopped
Instructions
- Heat oil in a deep bottomed vessel, add mustard seeds, fenugreek seeds and asafoetida. Let them splutter.
- Add the chopped onions and green chilli and fry them until they are brown.
- Meanwhile, pressure cook bottle gourd and drumstick for one whistle with little water.
- When the onions are brown, add the coriander powder, cumin powder and chilli powder.
- Add the chopped tomatoes and fry until they are soft.
- Add the pressure cooked vegetables to it and also add the squeezed out tamarind juice and sugar.
- Boil this gravy until the tamarind juice is cooked.
- Garnish with coriander leaves.
