Bottle gourd chutney

Background
Bottle gourd is a long melon and is a water-based vegetable. It is very good for your health and nutritious too. This recipe is simple, yet delicious and done in South Indian style, with tempering. This chutney is a wonderful, versatile way to use this vegetable.
Ingredients
- 250 gm bottle gourd chopped into medium size pieces
- 5 green chillies
- 1 table spoon sesame seeds
- 2 tsp tamarind pulp
- 1 bunch Coriander leaves chopped
- 3-4 pods garlic
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 pinch turmeric powder
- Salt to taste
- 3 tsp oil
- *For seasoning: *
- ¼ tsp mustard seeds
- ½ tsp split black lentil
- 1-2 dry red chillis
- Few fresh curry leaves
- 1 pinch asafetida
Instructions
- Heat oil in a pan and add coriander, cumin seeds and stir fry for 3 mins. Keep aside.
- In the same pan add sesame seeds and fry till they splutter, remove and set aside.
- In the same pan add oil, add the chopped bottle gourd, green chillies, garlic cloves, coriander leaves, a pinch of turmeric powder and fry for 10 mins, remove and cool.
- Grind coriander, cumin and sesame seeds, then add rest of the ingredients along with tamarind extract and salt. Grind to a fine paste.
- Heat one tsp oil in a pan, add mustard seeds and let them pop, add black lentils and let it turn brown, add curry leaves, asafetida and dry red chillies and stir fry for few seconds.
- Pour the seasoning over the ground paste and serve with hot rice.
