Braised leeks with orange

Background
This quick and easy braised leeks with orange goes fantastically with pork chops or with a Sunday roast. It also goesย well as a side-dish in a festive menu - and can be prepared in advances and re-heated.
Ingredients
- 50g butter or dairy-free margarine
- 500g leek
- 2 tsp cornstarch
- 200 ml freshly squeezed orange juice
- zest of 1 orange
Instructions
- Thinly slice the leeks (including most of the green part too).
- Melt the butter, add the leek slices, season with salt and pepper. Cover with a lid and gently sautรฉ at a low temperature for about 8 minutes until tender.
- Add the cornstarch, stir gently fry for 1 minute until, then add the orange juice and sprinkle with most of the zest. Bring to a simmer, and cook until the sauce thickens.
- Scatter the remaining orange peel over it before serving,
