Broccoli and pear salad

Background
I’m normally not that keen on savoury salads containing fruits but this broccoli and pear salad goes fantastically with roasted poultry - particularly with duck or goose. So this dish is ideal for special occasions and dinner parties.
Ingredients
- 200g tenderstem broccoli
- 1 Tbsp olive oil
- 50g walnuts
- 1 large pear
- 2 Tbsp balsamic vinegar
- 100g mixed leaves (rocket, radicchio, baby spinach, cress etc)
- 50g feta cheese (optional)
Instructions
- Steam the broccoli over boiling water or blanch for 2-3 minutes. Drain.
- In the meantime, cut the pear in half, remove the seeds and slice.
- Heat the oil in a saucepan, fry the pear slices and walnuts for 2 or 3 minutes until golden. Add the balsamic vinegar, let it bubble for a few seconds, then turn off the heat.
- Scatter the salad leaves onto a large plate, arrange the broccoli, pears and walnuts on top. Crumble the feta (if used), then pour over the cooking juices.
