Background
If you like chicken legs and want a simple, no-fuss yet tasty recipe -Β try this Cajun chicken bake! I made it with courgette & sweet potatoes but you can use other vegetables too - carrots, parsnips, squash, red peppers, beets, swede, fennel would work just as well.
Ingredients
- 8 chicken drumsticks and/or thighs (about 750g)
- 1 red onion, cut into chunks
- 1 courgette halved and cut into thick slices
- 500g sweet potatoes
- 1 handful of chopped walnuts
- 1 Tbsp Cajun seasoning
- 1 Tbsp olive oil
- 2 Tbsp runny honey
- Salt and pepper
Instructions
- Preheat the oven to 180C. Cut the onion into wedges, the courgette & sweet potatoes into chunks. Roughly chop the walnuts.
- Put the chicken, vegetables and walnuts into a roasting tin. Season with salt and pepper.
- Mix the Cajun seasoning, oil and honey together, then drizzle over the chicken and vegetables and, using a silicon brush, cover the chicken and vegetables evenly.
- Roast for about 40 minutes until the vegetables are tender and the chicken is cooked through.
- Serve warm, perhaps with some green salad on the side.
