Cauliflower stuffed roti (Cauliflower parata)

Background
Cauliflower parata will definitely be a hit in any party served as a main course. It goes very well with any Indian pickle or just raita. It is very filling and also tastes delicious.
Ingredients
- ½ Caulflower grated
- ½ tsp Chilli powder (Optional)
- 1 tsp Cumin powder
- 2 tsp Dry mango powder
- 1 Green chilli chopped
- A sprig of coriander leaves chopped
- Salt as required
- 2 cups whole wheat flour
- Water as required
- Oil or clarified butter as required to drizzle
- ½ tsp Turmeric
Instructions
- Mix the grated cauliflower with cumin power, salt to taste , dry mango powder, chilli powder, green chilli (chopped), turmeric and coriander leaves.
- Heat the oil in a pan, add the cauliflower mixture to it and fry until all the moisture is gone and until the cauliflower is cooked. Set it aside to cool.
- In a bowl, mix the flour, salt and water and knead to a smooth and soft dough.
- Divide the dough into medium sized dough balls. Take a dough ball and roll it out just enough to put 2 Tbsps of cauliflower mixture on it. Holding the edges of the rolled out dough, seal the mixture.
- Again roll out this sealed dough into a thin round roti.
- Heat a pancake pan and put this stuffed parata on it. Fry both side until they are brown but not burnt.
- Drizzle it with clarified butter and serve hot.
