Background
Most root vegetables can be used make a wonderful mash which is a surprisingly nice alternative to the usual mashed potato. A perfect example is this celeriac mash, which goes well with any roasted, fried or grilled meat. Also, it's less starchy than potatoes, so it fits in a low-carb diet.
Ingredients
- 1 celeriac
- 2 cloves of garlic
- 300 ml milk
- Pinch of grated nutmeg
- Pinch of ground ginger
- 1 knob of butter or 1 Tbsp single cream
- 1 handful of parsley, chopped
Instructions
- Peel the celery, cut into small chunks. Put these in a saucepan. Add the milk, garlic and a pinch of salt. Bring to the boil, then simmer for 20 minutes over a low heat until soft. Drain the milk, but reserve it.
- Using a hand-held blender, process the celeriac until creamy. Add some of the reserved milk and butter or cream - enough to get a smooth but thick consistency.
- Stir in the spices and parsley. Taste and season with salt & pepper to your liking.
- Serve warm.
