Background
During those couple of weeks of Summer when cherries are in abundance and cheap at the market, it's worth buying several kilos - not only can you make yummy puddings and cakes but you can preserve them for the winter by freezing them or making compote, jam & ice-cream from them. If you put a few bags of cherries aside in the freezer for later use, you can make delicious desserts for Christmas or Valentine's day or just as a special treat. This cherry fool is a perfect example - it's ready in 15 minutes and absolutely delicious! Add some liqueur and you'll have yourself a special, celebratory pudding!
Ingredients
- 300g cherries, pitted and halved
- 50g caster sugar
- 100 ml double cream
- 100 ml Greek yoghurt
- 2Tbsp cherry jam
- 1 Tbsp orange or almond liqueur
- Crumble: shortbread, Amaretti biscuit or toasted almond flakes
- Garnish: mint leaves (optional)
Instructions
- Put the cherries in a pan with the sugar and 3 Tbsp of water. Add the liqueur if used. Simmer gently for 10 minutes until thick and syrupy. Set aside to cool.
- Whisk the cream until it forms soft peaks, then gently fold in the yogurt and jam.
- Spoon some of the cooled cherries into 4 small glasses and add some cream. Layer some more cherries (and the syrup) then top with more cream.
- Crumble your chosen biscuit or the almond flakes on top and garnish with some mint leaves.
