Chicken stir-fry with basil

Background
Basil is a relatively new herb in China, so only modern recipes use it and even these tend to use Thai-basil which is smaller and less intense in flavour. This chicken stir-fry with basil is a lovely, easy-to make dish - perfect in a Chinese menu or as a no-fuss meal served with rice.
Ingredients
- 450g chicken breast (boneless)
- 1½ Tbsp peanut (groundnut) oil
- 2 Tbsp chopped garlic
- 1 Tbsp chopped ginger
- 50 ml chicken stock
- 1 Tbsp soy sauce (light)
- 2 Tbsp chilli bean sauce
- 1 tsp palm or unrefined sugar (optional)
- 2 tsp sesame oil
- 1 handful basil or Thai basil leaves, chopped
Instructions
- Cut the chicken breasts into 4x1cm strips.
- Heat the wok over high heat, then pour in the oil. When the oil starts smoking, add the garlic and ginger. Stir-fry for about 20 seconds until golden. Add the chicken strips, stir-fry for 2 minutes. Pour in the broth, then add the bean sauce (and sugar if used). Cook for 5 minutes.
- Finally add the sesame oil and the basil leaves.
- Serve hot.
