Chicken Tacos with Spiced Bean Salad

Ready in just 15 minutes, these chicken tacos with spiced bean salad are a quick, healthy and flavour-packed meal, perfect for busy weeknights or relaxed weekend lunches. Using tinned spiced mixed beans as a base keeps things simple while still delivering plenty of protein, fibre and bold flavour. The dish is easy to customise depending on what you have in the fridge. Corn or wheat tacos both work well.
Ingredients
- For the chicken:
- 2 chicken breast fillets
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and freshly ground black pepper
- 1 lime, juiced
- 2 garlic cloves, minced
- A splash of water
- Oil, for cooking
- For the spiced bean salad:
- 1 tin mixed spiced beans
- ½ small tin sweetcorn, drained
- 2 spring onions, finely chopped
- 2 Tbsp chopped fresh coriander
- To serve:
- Corn or wheat tacos
- Chilli sauce or jalapeño slices
- Wild rocket leaves (optional)
Instructions
- Cut the chicken breasts into long, thin strips or bite-sized pieces.
- Place the chicken in a bowl, add the cumin, smoked paprika, a little oil, and season with salt and pepper. Toss well to coat evenly.
- In a separate bowl, combine the spiced beans, drained sweetcorn, spring onions and chopped coriander. Taste and adjust the seasoning or heat if needed. Set aside.
- Heat a frying pan over medium-high heat. Add the chicken and cook for about 5 minutes, stirring frequently.
- Add the minced garlic and lime juice, continuing to stir. Add a small splash of water if the pan looks dry.
- Once the chicken is cooked through (but still juicy), transfer it to a plate and allow it to rest for 5 minutes.
- Warm the tacos in a dry frying pan or on a griddle for about 1 minute per side.
- Fill each taco with a spoonful of spiced bean salad, some chicken, and a few rocket leaves if using. Finish with chilli sauce or jalapeño slices.
- Serve immediately and enjoy while warm.
