Chickpea and grilled pepper burger

Background
Vegetarian burgers have such a bad reputation! But actually, they can be just about as delicious as the meat ones. Here is an example that's tasty and very filling too. I like eating this burger in a pita but, of course, you can serve the patties in buns or rolls too.
Ingredients
- 100g pine nuts
- 1 tin of chickpeas (400g)
- 1 bunch of spring onions
- 2 garlic cloves, pressed
- 150g grilled red peppers (skin removed)
- Handful of basil leaves
- 100g hard cheese
- 100g breadcrumbs (or rice crumbs)
- To serve: pita or buns, lettuce or rocket, Greek yogurt, etc.
Instructions
- Dry-fry the pine nuts and set aside.
- Chop the spring onions and gently fry them in little oil until softened. Add the garlic, stir for 1 minute. Leave to cool.
- Drain the chickpeas, then, in a food processor, blend with the onion mixture, basil leaves, grilled peppers and cheese into a coarse pulp.
- Transfer the mixture to a bowl, add the breadcrumbs, pine nuts and season to taste with salt and pepper.
- Form six balls, press these slightly between your palms. Rest them on a plate until you're ready to cook them.
- Heat a little oil in a frying pan and fry each burger for 4-5 minutes on both sides, until golden brown.
- Serve the burgers in toasted pita or traditional bun, with green salad and yoghurt .
Tips
- Instead of grilled pepper you can use jarred roasted peppers.
- If you want the patty to be gluten-free, just use rice-based crumbs.Β
