Chickpea mash with garlic
Background
When you make a roast dinner - take the opportunity while the oven's hot anyway to wrap a bulb of garlic (unpeeled) in some foil, then bake it for 30 minutes or so. The roasted garlic can then be used for many interesting dishes over the next few days. This chickpea mash with roast garlic is an example of this - a simple side dish that goes superbly with grilled or roasted meat & fish, particularly with Middle-Eastern style dishes. It’s super healthy too!
Ingredients
- 1 bulb of roasted garlic
- 1 onion
- 300 ml vegetable stock
- 1 can of chickpeas (400g)
- 1 Tbsp chopped coriander or parsley
Instructions
- Finely chop the onion.
- Heat a spoonful of olive oil in a frying pan and gently sauté the onion.
- Drain the chickpeas, add to the onion, then pour over the stock. Cook for 10 minutes.
- Meanwhile, squeeze out the flesh of the garlic and chop the herbs of your choice.
- Drain the chickpeas through a sieve, reserving some for stock.
- Put the chickpeas into a bowl, and mash roughly with a fork, adding some of the stock to achieve your desired consistency Add the garlic and herbs, season with salt and pepper and combine well.
- Serve warm.
