Chickpeas with spinach

Background
This is a very tasty side-dish that goes well with grilled meat and fish. It can also be used as filling in pita bread or wrapped in flatbread with kebab etc. Also, it's super healthy!
Ingredients
- 500g fresh spinach (or 250g frozen)
- 2-3 tbs olive oil
- 4 cloves garlic, crushed
- 1 can (400ml) of chickpeas, drained
- 1 tsp ground cumin
- 1 tsp paprika
- Juice of 1 lemon
- Salt and pepper
Instructions
- Pour hot water over the spinach. After a couple of minutes drain and press through a sieve. When cooled, form a ball and squeeze the water out completely. Chop finely.
- Heat the oil in a deep frying pan and fry the garlic for 1-2 minutes until golden. Add the cumin, paprika, chickpeas, spinach and lemon juice. Season to taste.
- Simmer under cover for 5-10 minutes, stirring occasionally.
- Serve warm as a side dish or as filling in pita and flat bread.
Tips
If you like spicy food, add half teaspoon of chilli flakes to the garlic.© 2025 Copyright CookTogether
