Chicory cups with spiced prawns & mango

Background
These are yummy, no-cook nibbles that are perfect for winter parties, or as an appetizer with a glass of Prosecco at a dinner party. It's best to make the filling ahead of the party, thenΒ the cups can be assembled quickly - just a couple of minutes before serving.
Ingredients
- 250g prawns (cooked and peeled)
- 2 Tbsp mayonnaise
- 3 Tbsp Greek yoghurt
- 2 tsp ketchup
- ½ mango, peeled
- 1 chilli
- 1 handful of coriander leaves
- 3 heads of chicory (white or red)
- Tabasco
- 1 Lime
- Salt and pepper
Instructions
- Separate the chicory heads into leaves.
- Mix the mayonnaise & ketchup with the yogurt. Add a few drops of Tabasco to it.
- Deseeds the chilli then finely chop. Cut the mango into tiny cubes. Chop the coriander.
- Mix the mango, chilli and coriander with the sauce. Squeeze some lime juice over it.
- Gently fold in the prawns. Taste and adjust the spices, seasoning and lime to your liking.
- Fill the chicory leaves with the mixture, and arrange on a platter.
