Background
If you’re after a low-cal salad or you’re on the fasting diet, I highly recommend this crunchy chicory and fennel slaw. It’s healthy, easy to make and very low in calories. You can add some celery to it too if you like! Serve it with grilled fish - or it makes a lovely condiment in a burger or flatbread too! If you’re on a calorie -restricted diet leave out the oil or use a couple of squirts of 1 Cal oil spray!
Ingredients
- 1 chicory
- 1 fennel
- 2 spring onions (optional)
- 5 radishes
- 2 Tbsp olive oil
- 1 Tbsp chopped parsley
- 2 Tbsp apple cider vinegar
- ½ chilli ( optional)
Instructions
- Remove the cores of the chicory and fennel, then thinly slice them or shred them.
- Finely chop the spring onions and shred the radishes too.
- Put the shredded vegetables in a large bowl. Add the oil, parsley and vinegar.
- Finely slice the chilli (if used), and scatter on top of the slaw. Season with salt and pepper to your liking.
- Let it rest for 15 minutes before serving.
