Chilli & lemon baked chicken

Background
This chilli & lemon baked chicken is perfect for get-togethers, midweek family meals or even for parties and picnics! It's a bit spicy, so serve with some cooling salad or vegetables. In the summer you can barbecue or grill the chicken instead of roasting.
Ingredients
- 1.5 kg chicken pieces (thighs, drumsticks, wings etc)
- 2 lemons
- 1 Tbsp olive oil
- 1.5 Tbsp dried chilli flakes
Instructions
- Squeeze the juice out of one lemon.
- In a large (non-metallic) mixing bowl mix the oil, lemon juice and chilli flakes. Add the chicken pieces, coat them well, then marinate for 2-3 hours in the fridge.
- Preheat the oven to 180°C. Take the chicken out of the fridge and put them in a roasting dish. Season with salt and pepper, cover the tray with aluminium foil (or put a lid on).
- Bake for 35-40 minutes in the oven, then remove the foil/lid and add the other lemon cut in half. Turn the oven to grill setting and grill for a few minutes until the skin is golden and crispy.
- Squeeze the juice of the caramelized lemon over the chicken and serve.
