Chilli mushroom noodles

Background
Chilli mushroom noodles make a quick snack and are very tasty too. When making for kids, one can omit the chillies to make it less spicy. These noodles have a nice piquant kick to them.
Ingredients
- 150g mushrooms, chopped
- 2 spring onions, chopped
- 1 Tbsp spring onion greens, chopped
- 3 Green chillies, chopped (or 1 green chilli for less spice)
- 1" Ginger chopped
- 4 Garlic cloves, chopped
- 1 tsp White vinegar
- 1 tsp Soya sauce
- Salt as required
- 100g Noodles, thin
- 1 Tbsp Oil
- ½ tsp Pepper
Instructions
- Cook the noodles according to the instructions on the packet, run through cold water and set them aside.
- In a large wok, heat the oil on high heat. Add ginger, garlic, green chillies and the chopped spring onions. Fry for a minute.
- Add the chopped mushrooms and fry for 3 minutes.
- Add the noodles and mix.
- Add salt, pepper, white vinegar and soya sauce then mix.
- Garnish with the chopped spring onion greens.
