Chinese chicken noodle

Background
This Chinese chicken noodle stir-fry is ready in just 15 minutes, so it's perfect on busy working days or lazy weekends. Also, it's ideal for Chinese-themed parties! It's not spicy so kids can eat it too.
Ingredients
- 2 Tbsp peanut/groundnut oil
- 2 cloves of garlic
- 1 onion
- 2 cm piece of ginger
- 4 chicken breast fillets
- 1 red or yellow bell pepper
- Β½ head of Chinese cabbage
- 1 Tbsp honey
- 2 Tbsp soy sauce
- 4 portions of Chinese egg noodles
Instructions
- Cut the chicken into thin strips.
- Finely chop the onion, garlic & ginger.
- Slice the pepper and cabbage into thin strips.
- Heat the oil in a wok. When it's piping hot, add the onion and ginger and garlic. Stir-fry for a minute, then added the chicken pieces, and fry for 5 minutes while constantly stirring.
- Add the cabbage, pepper, honey and soy sauce, stir-fry for a further couple of minutes.
- Meanwhile, cook the noodles in boiling water following the packet instructions (it should take 3-5 minutes), then drain.
- When the vegetables are tender (but still have some bite), mix in the noodles.
- Season to taste and serve immediately.
