Chinese chicken salad

Background
This Chinese chicken salad is zesty and spicy - perfect for a drinks party. Serve it in little gem (mini cos) lettuce leaves or rice wraps.
Ingredients
- 2 boneless chicken thighs (or leftover roast chicken)
- 2 Tbsp groundnut oil
- 1 Tbsp sesame oil
- 4 Tbsp soy sauce (reduced salt content)
- 1 Tbsp Chinese rice vinegar
- 1 tsp cane sugar
- 2 cloves of garlic (minced)
- 2Β½ cm fresh ginger
- 1 red pepper
- 1 red chilli
- I bunch of spring onions (about 5)
- Handful of coriander
Instructions
- Fry or grill the chicken thighs. Cool and cut into 1cm strips. Do the same with any leftover roast chicken.
- Slice the pepper and ginger into thin strips. Slice the spring onion diagonally. De-seed and finely chop the chilli.
- Whisk the soy sauce, sugar, vinegar and both oils in a mixing bowl. Add the garlic and chilli.
- Scatter the ginger, pepper and spring onion slices onto a serving plate, then drizzle with half of the dressing. Put the chicken slices on top and drizzle with the remaining sauce.
- Serve at room temperature.
