Chinese style chicken and red cabbage salad
Background
This Chinese style chicken and red cabbage salad is made with ready-cooked chicken, so it’s a perfect recipe when you’ve got leftover baked/roasted/grilled chicken. You can make it with peanuts or cashew nuts, whichever you have in your cupboard. It’s delicious, healthy and takes max 10 minutes to make!
Ingredients
- 1 cup cooked chicken chunks
- ½ red cabbage
- 1 carrot
- 1 bunch of spring onions
- 1 red chilli, deseeded
- 1 handful coriander leaves, chopped
- 1 handful salted peanuts or cashew nuts
- For the dressing:
- 2 Tbsp hoisin sauce
- 1 Tbsp toasted sesame oil
- 1 Tbsp rice vinegar
Instructions
- Finely slice or shred the cabbage, coarsely grate the carrot, finely chop the chilli and diagonally slice the spring onion. Put all in a large bowl.
- Shred the chicken meat into bite-sized chunk. Dry-fry the nuts, cool then add to the chicken.
- Mix together the dressing.
- Add the nuts, coriander and chicken to the salad. Pour over the dressing and toss. Season with salt and pepper and serve.
