Background
You can make so many interesting and easy dishes of leftover roast or grilled chicken meat! This Chinese-style chicken salad is a perfect example - ready in just a few minutes! If you want to make it from scratch, just fry/grill/barbecue/roast some chicken breast or thighs and follow the recipe.
Ingredients
- 1 cup of shredded grilled/roasted chicken meat
- 1 small romaine lettuce
- 1 carrot
- 4 spring onions
- Β½ cup of mangetout, Edamame beans or green beans
- For the dressing:
- 2 Tbsp rice wine vinegar
- 1 Tbsp soy sauce
- 1 clove garlic, minced
- 1 tsp freshly grated ginger
- 1 tsp sesame oil
- 1 tsp unrefined sugar
Instructions
- Whisk the ingredients of the dressing together and set aside.
- Separate the leaves of the lettuce. Diagonally slice the spring onion. Using a julienne peeler cut the carrot into thin strips.
- Blanch the mangetout or beans in boiling water for a couple of minutes then rinse under cold water.
- Arrange the lettuce leaves in a serving dish, then scatter the spring onion, carrot, chicken and mangetout/ green bean on top, then drizzle with the dressing.
- Serve at room temperature.
