Chinese vegetarian stir fry noodles

Background
Noodles are a personal favourite in the family. These stir fry noodles can be prepared in a jiffy and are very tasty. One can get the goodness of healthy vegetables too.
Ingredients
- 250g Thin free range egg noodles
- 1 Onion (thinly sliced)
- 2 Cloves of garlic (Finely chopped)
- 3 cm Piece of ginger (Finely chopped)
- 1 Red pepper (Roughly chopped)
- 1 Green pepper (Roughly chopped)
- 1 Small carrot (Roughly chopped)
- ΒΌ Chinese cabbage (Shredded)
- 100g Bean sprouts
- Small handful bamboo shoots
- 2 Tbsp Vegetable oil
- 2 tsp Soya sauce
- Salt as required
Instructions
- Cook the noodles according to the instructions on the packet and run them under cold water to stop them cook further and drain.
- Heat a large wok on high heat and add vegetable oil, ginger and garlic. Fry for a minute.
- Then add all the vegetables and stir fry for 1 minute. Cover them with a lid and cook for a couple of minutes.
- Add the noodles and mix.
- Add salt to taste and soya sauce and mix.
- Serve hot.
Tips
Add a handful of toasted sesame seeds to give a nutty crunch to your noodles.© 2024 Copyright CookTogether
