Chipolatas and squash traybake
Background
Tray baked sausages with various veggies are family favourites all over the world. In my family chipolatas are particularly popular, so this dish is a regular mid-week meal for us. I make it with other veggies too - potatoes, sweet potatoes, aubergine, courgette, parsnip, beetroot, swede, carrot work very well too. But this particular version, chipolatas and squash traybake, is really nice on autumnal evenings. You can drizzle some maple syrup on the top , if you like.
Ingredients
- 400g Chipolatas
- 1/2 butternut squash, peeled
- 1 red onion
- 2 cloves of garlic
- 1 red pepper
- 1 sprig of rosemary
- 4 sprigs of thyme
- 1 handful of cherry tomatoes
- 2 tbsp chopped parsley
- Salt and pepper
- Chilli flakes for spicy version
- Maple syrup (optional)
Instructions
- Preheat the oven to 180C degrees.
- Cut the squash into cubes, the onion into thin wedges, the pepper into chunks. Thinly slice the garlic. Scatter all these into a large baking tray, the arrange the chipolatas & tomatoes between them.
- Scatter the chilli flakes (if used), and the rosemary & thyme leaves on top, season with salt & pepper, then drizzle with some olive oil & maple syrup (if used).
- Put the tray in the oven and bake for about 30 minutes, turning the sausages and veggies a couple times.
- Serve warm with a crispy salad on the side.
