Chipolatas and squash traybake
Background
Tray baked sausages with various veggies are family favourites all over the world. In my family chipolatas are particularly popular, so this dish is a regular mid-week meal for us. I make it with other veggies too - potatoes, sweet potatoes, aubergine, courgette, parsnip, beetroot, swede, carrot work Β very well too. But this particular version, chipolatas and squash traybake, is really nice on autumnal evenings. You can drizzle some maple syrup on the top , if you like.
Ingredients
- 400g Chipolatas
- 1/2 butternut squash, peeled
- 1 red onion
- 2 cloves of garlic
- 1 red pepper
- 1 sprig of rosemary
- 4 sprigs of thyme
- 1 handful of cherry tomatoes
- 2 tbsp chopped parsley
- Salt and pepper
- Chilli flakes for spicy version
- Maple syrup (optional)
Instructions
- Preheat the oven to 180C degrees.
- Cut the squash into cubes, the onion into thin wedges, the pepper into chunks. Thinly slice the garlic. Scatter all these into a large baking tray, the arrange the chipolatas & tomatoes between them.
- Scatter the chilli flakes (if used), and the rosemary & thyme leaves on top, season with salt & pepper, then drizzle with some olive oil & maple syrup (if used).
- Put the tray in the oven and bake for about 30 minutes, turning the sausages and veggies a couple times.
- Serve warm with a crispy salad on the side.
