Chipotle baked beans
Background
This chipotle baked beans is based on the famous Boston Baked Beans, which was traditionally cooked slowly on Saturdays, overnight for Sunday lunch and served with corn or brown bread. It used to be just beans sweetened with molasses or maple syrup, later flavored with salt pork or bacon. This recipe is a quicker version - it only needs 30 minutes to make! It's spicy, smoky, warming - perfect dish for the winter party season!
Ingredients
- 1 canned haricot beans
- 200g smoked streaky bacon
- 2 Tbsp maple syrup
- 2 Tbsp black treacle
- 1 Tbsp dark muscovado sugar
- 2 Tbsp chipotle paste
- 1 tsp English mustard powder
- 2 cloves
Instructions
- Chop up the bacon and fry till crispy. Add the drained beans and pour in 300 ml water.
- Mix the mustard powder with the chipotle paste and add to the beans. Stir in the black treacle, sugar and maple syrup.
- Add the cloves and pepper. Simmer for 20 minutes under cover.
- Remove the lid and cook further until you get a thick, sticky sauce sticking to beans and bacon pieces.
- Serve hot with crusty bread or corn scones.
Tips
- If you want to make it in a more traditional way, then soak 250g beans overnight and cook these for an hour in plenty of water.
- Drain the water but keep 400 ml. Put the cooking water and beans back into the pan, and continue the recipe above.
- But instead of cooking it on the stove, put the pan (covered) in a preheated oven (at 140°C) for 2 hours, then for a further hour (uncovered).
