Background
If you need an easy, spicy recipe to barbecue/grill some chicken legs, do try this Chipotle BBQ chicken! It’s very easy to prepare, really tasty and just a bit spicy. If you’re using standard Chipotle paste – you won’t need any tomato puree, in fact you might need to add some chilli flakes to it to properly spice it up! Serve the chicken with salsa or crispy green salad. They are nice cold too, so take them to a picnic or on a trip, alternatively you can make a nice salad or tacos with them.
Ingredients
- 6-8 chicken thighs/drumsticks
- 1 tsp olive oil
- 1 tbsp spicy chipotle paste
- 2 tsp tomato puree
- 1 tsp dried coriander
- 1 garlic, minced or ½ tsp garlic powder
- Juice & grated zest of 1 lime
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp ground pepper
Instructions
- Put the chicken pieces into a freezer bag.
- Mix the remaining ingredients in a small bowl until you get a smooth paste. Pour this over the chicken, tie the bag and massage the paste all over the chicken pieces with your fingers. Make sure they are well coated. Marinate in the fridge for minimum 30 minutes – ideally for 2 hours or overnight.
- Heat your BBQ or grill, set to medium flames. Place the chicken pieces on the grid and gently cook until lightly charcoaled. Make sure the chicken is cooked through properly.
- Serve warm or at room temperature.
