Chipotle bean and avocado tortilla wrap

Background
When you want a quick and easy lunch, supper or snack, try out this chipotle bean and avocado tortilla wrap! Itβs ready within 15 minutes, itβs healthy Β - vegan or vegetarian β and really yummy & filling.Β You can add jalapeno slices or chilli sauce for an extra heat. I like using extra strong chipotle paste to add a kick.
Ingredients
- 2Β TbspΒ olive oil
- 1 large or 2 smallΒ red onion
- 2Β clovesΒ garlic
- 1 tin kidney beans, drained and rinsed
- 1Β tspΒ chipotle paste
- 1 tsp tomato purΓ©e
- Β½Β red cabbage, finely shredded
- 1 lime, juiced
- 1 small red onion
- 1 handful coriander leaves
- 4Β tortilla wraps
- 1Β avocado
Instructions
- Thinly slice the onion and mince garlic. Shred the cabbage and mix with it with half of the onion, the lime juice and half of the oil. Season with salt and pepper and set aside.
- Heat the remaining the oil in a saucepan, then sautΓ© the other half of the onion for 5 minutes. Add the garlic and cook for a few seconds, then add the chipotle paste and tomato purΓ©e. Add the beans,and a small glass of water and cook for another 5 minutes until the sauce has reduced. Lightly crush the beans with a potato masher or fork to create a thick sauce.
- Cut the avocado in half, remove the stone, then peel and cut the flesh into thin slices. Drizzle with some lime juice to stop the avocado turning brown.
- Heat the tortilla wraps according to the pack instructions, then put them on plates and divide the bean mixture between them. Top with the red cabbage then the avocado and coriander. Squeeze some lime over them (you can add some chilli sauce, sour cream, grated cheese, plant based cream or cheese).
- Roll them up, then cut them in half and serve.
