Background
For summer get-togethers, barbecues, informal parties these chipotle beef skewers are perfect. You can marinate them hours ahead the grilling only takes 10 minutes or so. Serve them tucked into flat bread and/or with salsa. I used really spicy chipotle paste - if you’re making them with normal ones then swap the quantity of the tomato purée with the chipotle paste.
Ingredients
- 1 tsp Chipotle paste
- 1 Tbsp tomato purée
- 1 tsp dried oregano
- 1 tsp garlic purée
- Juice of 1 lime
- 1 red pepper
- 450g matured beef steak, diced
- 1 bell pepper
- 1 courgette (optional)
Instructions
- Mix the pastes, oregano, lime juice in a medium bowl. Add the beef and massage them, until each piece is well covered.
- Cover the bowl and rest in the fridge for minimum 30 minutes - overnight if the meat needs to be tenderised.
- Soak some wooden skewers in water 30 minutes before cooking.
- Take the meat out of the fridge. Heat your BBQ or grill.
- Cut the pepper and courgette (if used) into bite-sized chunks.
- Thread the beef and veggies onto the skewers, alternating them.
- Cook the skewers over medium flame to your liking.
