Chipotle pork with bean stew

Background
This chipotle pork with bean stew is on the table within 30 minutes – even quicker if you make the stew part ahead. It’s a bit spicy, but you can use mild chipotle pasta, if a mild version is preferred. Serve it with rice or flat-bread and a crispy salad on the side.
Ingredients
- For the pork:
- 4 thin pork loin fillets
- 1 tsp chipotle paste
- 1 tsp tomato purée
- 1 tsp olive oil
- Juice of ½ lime
- ½ tsp dried oregano
- For the stew:
- 1 Tbsp olive oil
- 1 onion
- 2 yellow peppers
- 2 cloves of garlic
- 1 tsp dried oregano
- 1 tsp cumin powder
- 1 tsp smoked paprika
- 1 tsp chipotle paste
- 2 tsp tomato purée
- 4 medium fresh, ripe tomatoes or 1 tin of plum tomatoes
- Salt and pepper
- Juice of ½ lime
- 1 tin kidney beans
Instructions
- First, marinate the pork. Mix the ingredients for the pork in a bowl, add the meat and coat each slice well. Set aside - chill if you want to cook them in more than 30 minutes.
- Make the bean sauce. Thinly slice the onion, bell pepper and chop the garlic. Roughly chop the tomatoes.
- Heat the oil in a large frying pan, then sauté the onion for 5 minutes. Add the bell pepper and garlic, stir-fry for a minute, then stir in the spices, followed by the chipotle pasta and tomato purée. Stir for a minute.
- Add the chopped or tinned tomatoes and a drop of water, if needed. Season with salt and peper.
- Bring to a boil, turn down the heat and cook for about 15-20 minutes, until get a silky, thick sauce.
- Drain the beans and add them to the stew.Warm through, the add the chopped coriander and lime juice. Cover and set aside.
- When you're ready to cook the pork, heat a griddle pan.
- Season the pork with salt and pepper, then put them on a preheat griddle pan, BBQ or grill. Fry them for a couple of minutes on each side (depending on the thickness of the meat) until lightly charred.
- Serve the bean stew with the pork placed on the top and your chosen side dishes.
