Chocolate Coconut Yogurt Muffins
Background
I made these Chocolate Coconut Yogurt Muffins with dairy-free coconut yoghurt. They were really yummy and moist. And not too sweet because I used Stevia extract instead of sugar. So these muffins are not as unhealthy as the ones you buy in the shops! You can make them even more chocolatey by adding some good quality chocolate chips or small pieces! Enjoy!
Ingredients
- 1½ cup self-raising flour
- ½ cup cocoa powder
- ½ tsp baking soda ( bicarbonate of soda)
- ½ cup Stevia
- 1 large egg
- 1 cup coconut yogurt
- ½ cup coconut oil
- 1 tsp vanilla extract
- ½ cup dark chocolate chip (optional)
Instructions
- Preheat oven to 180 °C.
- Line a muffin tin with paper baskets.
- In a mixing bowl combine flour, cocoa powder, baking soda and stevia.
- In another medium bowl whisk the egg, then mix with the yogurt, coconut oil and vanilla extract, until smooth.
- Add the wet mixture to the dry one and gently stir with a wooden spoon until just combined. Fold in the chocolate chips if used.
- Divide the batter equally between the muffin pan baskets.
- Bake for 20-25 minutes until an inserted skewer comes out clean.
- Remove the tin from the oven and let the muffins cool in the pan for 5 minutes.
- Transfer the muffins from the pan to a wire rack to cool completely.
