Chocolate dates stuffed with almonds

Background
If you want some delicious and easy treats during the winter festivities, try these chocolate dates stuffed with almonds! They are perfect as presents for friends and family members, wrapped nicely in cellophane or paper bag.
Ingredients
- 100g good quality dark chocolate (at least 70%)
- About 18 large dates
- About 18 almonds
- 30g white chocolate (or crushed pistachios, cinnamon powder, chopped almond flakes, desiccated coconut)
Instructions
- Cut a slit in each date and remove the pit. In place of the pit press in an almond. Close the dates so they completely cover the almonds. Set them aside.
- Break the dark chocolate into small pieces. Place a glass bowl over a small pan of simmering water, then add the chocolate bits. Make sure that the bottom of the bowl doesn’t touch the water. Stir gently until melted, then turn off the heat and remove the glass bowl carefully.
- Dip the dates in the melted chocolate, one by one and coat them completely. Place them on a tray, lined with parchment paper.
- Sprinkle them with crushed pistachios, almond flakes, desiccated coconut, cinnamon or cocoa powder, then let them set in the fridge.
- Alternatively, let them harden in the fridge, then melt some white chocolate and splash it over the chocolate dates.
- Let them set again in the fridge, then serve.
