Chocolate & vanilla marble loaf cake
Background
In Middle -Europe Marble cakes are very popular in Cafes. Kids love to have them for breakfast or as their afternoon snack. This chocolate & vanilla Marble loaf cake is my familyβs favourite Β - sometimes I glaze it with melted chocolate too. Β Itβs moist and yummy, keeps well in an airtight container.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 pinch of salt
- 100g unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract ( or paste)
- 1/2 cup sour cream
- For the chocolate sauce:
- 3 tbsp melted butter
- 2 tbsp cocoa powder
- 50g sugar
Instructions
- Preheat the oven to 180 C degrees. Line medium loaf pan with parchment paper.
- In a medium sized bowl, combine the chocolate sauce until smooth. Set aside.
- Mix the flour, baking powder and salt in bowl.
- In a large mixing bowl or food processor, beat the softened butter with the granulated sugar, then add the eggs gradually and beat until smooth. Stir in the vanilla, then add the flour mixture and combine. Add the sour cream and mix until smooth.
- Add 1 cup of the batter to the chocolate sauce and stir until combined.
- Spoon half of the remaining batter into the prepared pan then add the chocolate batter, then cover with the remaining plain batter. Using a palette knife or wooden flat spoon, make swirls in the batter, creating a marble effect. Spread the top evenly.
- Bake the cake for 25 minutes, then reduce the temperature to 160CΒ° and bake for 25 minutes more. Cover the pan loosely with foil and bake for about 15-20 minutes, or until the cake i is golden and a skewer inserted in the middle comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack and let it cool completely.
- When cooled, you can glaze it with a chocolate sauce or frost it with cream cheese if you like. I normally just dust it with icing sugar before serving.
