Chorizo and grilled pepper omelette

Background
If you want an easy yet delicious dish for a weekend breakfast or brunch try this chorizo and grilled pepper omelette! Itβs ready within 15 minutes, really yummy and filling. Serve it with green salad and wholesome bread.
Ingredients
- 5 cm chorizo
- 1 grilled red pepper
- 1 grilled red onion
- 4 large eggs
- Parsley or coriander leaves
- Cheese, optional
Instructions
- Remove the skin of the chorizo and roughly chop the sausage meat.
- Slice the grilled pepper and onion.
- In a bowl, lightly whisk two eggs.
- Heat a frying pan and add the chorizo then gently cook until the chorizo releases its fat. Transfer them to a plate.
- Pour in the egg mixture, letting it spread out evenly.
- After a minute or so, when the egg is jelly-like, scatter half the chorizo, red pepper and onion on top. Add some grated cheese if you like.
- Turn down the heat and cook for about 5 minutes until the egg has just set and the cheese has melted.
- Scatter some parsley on top and fold the omelette in half. Cook for another minute then slide it onto a plate and keep warm.
- Make another omelette with the remaining eggs, red pepper and onion pieces.
- Cut the omelette in half and serve.
