Christmas Biscuit salami
Background
Though unbaked biscuit "salami" is originally an Italian sweet, it's very popular in Middle & Eastern Europe during the Christmas period. Normally it's a mixture of cocoa powder, sugar, butter, rum (or other liquor) and crumbled cookies, which is rolled into a log shape, chilled, then sliced. You can add nuts, dried fruits & spices to make it taste more festive - just like in this Christmas Biscuit salami version. It's super easy to make, no baking is required - and the result is a real crowd pleaser! It also makes a nice gift if you're going to a party!
Ingredients
- 150g butter or dairy-free margarine
- 100g unrefined sugar
- 2 Tbsp cocoa powder
- 1 beaten egg
- 250g of biscuits (crunchy)
- 1 tsp vanilla essence
- 100g chopped dried fruits (such as raisins, cranberries, cherries, dates, figs etc.)
- 1 tsp ground ginger (or mixed spice)
- 100g desiccated coconut
Instructions
- Melt gently the butter in a saucepan. Add the sugar and cocoa powder.
- When the sugar is melted, add the egg and vanilla. Stir for 2-3 minutes. Before it boils, turn off the heat.
- Coarsely crush the biscuits then add to the mixture. Add the ginger and dried fruits, then gently stir.
- Put a large piece of baking paper on a clean surface and sprinkle half of the coconut over it.
- Spoon half of the mixture in the middle and form a 30 cm long log and roll this in the desiccated coconut to cover all over. Wrap with clingfilm, closing off the ends tightly.
- Repeat with the remaining mixture.
- Put the two salamis in the refrigerator and chill for at least 4 hours.
- Serve it sliced.
Tips
- Add 1 Tbsp of rum if you're making it for adults.
- You can add rum extract or almond extract too.
- Use any kind of cookies - as long as they are not too soft. Digestive, amaretti or gingerbread biscuits are perfect.
