Background
Christmas leftovers can be used for party food for New Year’s Eve - for example Panettone, cookies, mincemeat, puff pastry, compotes and so on. This Christmas leftover tiramisu is not only boozy but really delicious too! I made them with Lebkuchen sold by Lidl but similar gingerbread cookies would work too.
Ingredients
- About 20 Lebkuchen or gingerbread cookies
- 100 ml espresso coffee
- 2 Tbsp Amaretto
- ½ jar good quality mincemeat
- Cherries in brandy, Kirsh or in syrup
- Dried cherries, sour cherries
- Cocoa powder
- For the cream:
- 200 ml Mascarpone
- 200 ml Double cream
- 2 Tbsp Amaretto
- Sugar to taste
Instructions
- Make the espresso and put it in a shallow dish. Add some Amaretto and let it cool.
- Whip the Mascarpone, double cream, some sugar and Amaretto until you get a fluffy, light cream.
- Cut the Lebkuchen cookies in half, horizontally, then soak them in the coffee for a couple of seconds on each side, then put them a shallow dish closely next to each other, creating an even layer.
- Spread some mincemeat evenly on top of the cookies, then scatter some dried cherries or sour cherries and brandied cherries over it.
- Now spread half of the cream on top.
- Repeat the layering of the soaked cookies, then the mincemeat, then the dried fruits & brandied cherries, then the cream.
- Cover with clingfilm and refrigerate until serving.
- Just before serving, dust with cocoa powder, then cut it into slices and serve.
