Cinnamon-maple baked chicken and sweet potato

Background
During harvest and the winter months I love the smell of cinnamon all over the house. This super easy cinnamon - maple baked chicken and sweet potato dish not only provides the aroma but itβs very tasty too! Perfect for an easy midweek supper or laid-back weekend meal. Serve a crispy green salad or steamed greens on the side.
Ingredients
- 8 pieces of chicken thighs and drumsticks
- 2 large sweet potatoes
- 2 red onions
- 2 tsp cinnamon powder
- 2 Tbsp olive oil
- Juice of 1 lemon
- 2 Tbsp maple syrup
Instructions
- Heat the oven to 200°C.
- Arrange the chicken and vegetable pieces in a large baking tray. Season with salt & pepper, dust with the cinnamon, drizzle with the oil and lemon juice. Put the lemon halves in the tray.
- Put the tray in the oven and turn the heat down to 180°C. Cook for 35 minutes until light brow , turning them once.
- Take the tray out and brush all vegetable and chicken pieces with the maple syrup.
- Cook for a further 15 minutes or so, until golden brown.
- Serve warm with the cooking juices poured over them.
