Background
These cocoa & oat muffins are not only yummy but prettyΒ healthy too! They are a perfect snack with coffee & tea or can be an afternoon treat for children.
Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1 cup coarsely chopped walnut
- 1 tsp baking powder
- ⅓ cup cocoa powder
- Β½ cup light muscovado sugar
- Β½ tsp salt
- 1 cup oaty milk
- ⅓ cup melted dairy-free margarine or vegetable oil
- 1 large ripe banana
- 2 eggs
- 1 tsp vanilla essence
Instructions
- Preheat the oven to 190Β°C. Line a muffin tin with paper cases.
- Mix the flour with the oats, baking powder, salt, sugar, cocoa powder.
- In another bowl beat the eggs lightly, then add the milk, oil and vanilla.
- Mash the bananas and add it to the egg mixture.
- Fold the wet mixture to the dry one, stir well, then fold in the walnut.
- Fill the muffin cases two thirds full with 2-3 spoonful of the batter.
- Bake for 20-25 minutes until brown.
- Cool the muffins on a wire rack.
